Soup is one of the best things about colder weather, it’s so easy to make and always filling. You can put just about anything into a pot, boil it, and you have a great tasting dish!

This is one of my favourites, all you have to do is chop everything up, then leave it for 20 minutes, and enjoy 🙂

This will make enough for 4 soup-hungry people

1ltr of vegetable stock
1 teaspoon of oregano
1 white onion
2 fine noodle nests
1/4 head of broccoli
1 pak choi
2 handfuls of mangtout
2 carrots
A handful of spinach
2 sticks of celery
2 handfuls of peas
4 mushrooms
1 handful of shredded cabbage
Salt and pepper to taste

Just boil your stock, add the heavier ingredients (onion, celery, carrot), add half the oregano and boil gently for 10 mins
