If I only talked about my book, I might appear a little self-centered. So I’ve decided Mondays are all about sharing. Yummy recipes!!
This one doesn’t really have a name, but it’s my absolute favorite way to get my veggies and still enjoy them. If you’re like me, you probably like fruit much better, but since I can’t have too much sugar, I opt for this two serving recipe:
1 cup of chopped frozen kale, 1 cup of coconut water, juice of one lemon, 1/4 cup of coconut cream, 1 tsp of stevia (I use organic powdered–it’s green), 1/2 cup of frozen pineapple chunks. Blend, pour, enjoy.
