Sneaky veg

This isn’t a true sneaky veg recipe in that the vegetables are finely chopped rather than blended in, but I decided to include it anyway because R enjoyed it so much that he had seconds. This is SO far from where we were even six months ago. One day broccoli pesto, the next a normal diet. Well perhaps not. But such a great step in the right direction.

This was my attempt to recreate an Annabel Karmel ready meal that both of the kids happily gobble up. However, Baby R wouldn’t eat this – but I reckon if I served it in a black plastic tray she’d be fooled 😉


Olive oil
1 small onion, finely chopped
1 clove garlic, finely chopped
1/2 red pepper, finely chopped
500g beef mince
1 x 400g tin of chopped tomatoes
tomato puree
Dried oregano (optional)
6 lasagne sheets
